Soda bread, a quick bake that's good with soup
This is a bit of an amalgam recipe that's come together over the last few times I've followed recipes for Soda Bread from others. It's great when I've got soup cooking and realise that there's no bread in the house and no chance of going out to get any

Ingredients

  • 375g plain flour
  • 125g wholemeal flour
  • 1 tsp bicarbonate of soda
  • 325ml milk, warmed
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 50g butter, melted

Method

  1. Pre-heat the oven to 200 degrees, fan assisted
  2. Combine the milk and lemon juice in a small jug and stir together
  3. Mix the flours (plain and wholemeal) in a large bowl with the salt and bicarbonate of soda
  4. Make a well in the dry mixture, pour in the butter and milk/lemon mixture and mix together to form a dough
  5. Flour a surface and knead the dough for a minute or two before shaping into a ball
  6. Place the ball onto a baking tray, squash it ever so slightly and then score a deep cross into the top
  7. Sprinkle it with flour and put into the oven for 35 minutes, adjusting the time up or down if needed

Eat it quick, it doesn't keep.
