Slow Cooker BBQ Pulled Chicken
I've had a slow cooker for a long long time but it spends most of its life sitting on a shelf seldom used. Since putting this recipe together, it's been made twice and will likely be made again in the next few weeks.

Ingredients

  • 4 chicken breasts
  • 1/2 white onion
  • 1tsp garlic puree
  • 2tbsp brown sugar
  • 25ml olive oil
  • 2tbsp hoisin sauce
  • 1tbsp worcestershire sauce
  • 1/2 chicken stock pot / stock cube
  • 300ml bbq sauce
  • Salt and black pepper to season

Method

  1. Finely chop, or grate the onion
  2. Add all the ingredients to a slow cooker, stir well to mix everything and ensure the chicken is well coated
  3. Turn the slow cooker to high and cook for four hours
  4. Use two forks to shred the chicken breasts in the slow cooker crock
  5. If the sauce around the chicken is too thin for you, move the shredded chicken to a frying pan, mix in 2tsp of cornflour that's been slaked in 2tbsp of water and heat until thickened

Serve the shredded chicken with iceberg lettuce, cucumber and sliced cherry tomatoes ready to be stuffed into soft flour wraps, pittas or another flatbread.
