Noodle salad


Serves: 20 people as one component of a BBQ buffet
Prep Time: 10 mins


1 carrot
60ml Soy sauce
3 nests of medium egg noodles, dried (c. 200g)
1 red chilli (mild/medium heat)
Couple of drops of fish sauce
Couple of drops of lime juice
Splash of oil (olive, or sesame for flavour)
1 clove of garlic, minced


  1. Cook the noodles according to their instructions and set aside
  2. De-seed and finely chop the red chilli
  3. Mix the Soy, fish sauce, lime juice, oil and garlic together
  4. Pour the mixed liquid into the noodles and mix well to coat. Add more Soy if the noodles don't look to have taken enough colour on from the Soy
  5. Use a vegetable peeler to turn the carrot into thin ribbons, straight into the noodles and then mix together
  6. Season well with black pepper, according to taste. Little/no salt will likely be needed thanks to the Soy Sauce
