Noodle salad

It's not the prettiest of dishes, but it is tasty
Whilst it's certainly not the most attractive of dishes, it's a quick and easy side to make for a BBQ to go with more traditional ones like potato salad and a dressed green salad

Serves: 20 people as one component of a BBQ buffet
Prep Time: 10 minutes
Cook Time: 3 minutes


  • 3 nests of dried medium egg noodles (approx 200g uncooked)
  • 1 red chilli (mild/medium heat)
  • 60ml dark soy sauce
  • A few drops of fish sauce
  • The juice of half a lime
  • A splash of oil (olive or toasted sesame for flavour)
  • 1 clove of garlic, finely minced
  • 1 carrot


  1. Cook the noodles according to their instructions and set aside
  2. De-seed and finely chop the red chilli
  3. Mix the soy, fish sauce, lime juice, oil, chilli and garlic together in the bowl the salad will be served in
  4. Peel the carrot and then use the peeler to make it into ribbons, straight into the bowl
  5. Add the noodles and toss until coated then season with freshly ground black pepper
  6. Taste and add more Soy if required
