Fruit Scones

There are probably more different recipes for scones, and even just for fruit scones, than there are people who make them on a regular basis. This is another one!


Serves: c. 8 4cm scones
Prep Time: 10 minutes
Cook Time: 15-20 minutes

  • 250g self raising flour
  • 50g dried mixed fruit
  • 50g caster sugar
  • 50g cold un-salted butter, cubed
  • 1/2 tsp salt
  • 180ml milk


  1. Pre-heat the oven to 200 degrees (fan assisted)
  2. Mix the flour, sugar, salt and butter together in a bowl and use your hands to rub the butter into the dry ingredients
  3. Add the fruit and milk and mix together
  4. Very lightly and briefly knead on a well floured surface
  5. Squash the dough until its around 2cm thick and cut out scones. Fold the dough together and repeat until it's all used up
  6. Brush the scones with milk, bake for 15 to 20 minutes then put on a rack to cool slightly before serving
