Cheese Scones

Cheese scones cooling ready to be buttered and eaten
Something of a quick Sunday afternoon snack, cheese scones that have been slathered with french salted butter - the sort of butter that contains crystals of sea salt - is quite a nice treat!

Ingredients

  • 300g self raising flour
  • 50g butter, chopped into small cubes
  • 200ml milk
  • 25g finely grated pamesan
  • 25g finely grated shropshire red cheese
  • 1/2 tsp paprika
  • 1/2 tsp ground black pepper
  • 1/2 tsp sea salt

Method

  1. Pre-heat the oven to 200 degrees (fan assisted)
  2. Rub the butter into the flour
  3. Add the remaining ingredients and bring together to form a a dough
  4. Very lightly and briefly knead on a well floured surface
  5. Squash the dough until its around 2cm thick and cut out scones. Fold the dough together and repeat until it's all used up
  6. Brush the scones with milk, bake for 15 to 20 minutes then put on a rack to cool slightly before serving
