Blueberry and Banana Mini-Muffins
With my niece and nephew visiting, this was a good reason to use up some left-over blueberries and a rather ripe banana that was sat in the fruit bowl. These mini-muffins don't grow massively, there's far too many blueberries in them for that and they're very sticky when freshly cooked

Ingredients
- 110g self-raising flour
- 110g salted butter
- 70g golden caster sugar
- 150g blueberries
- 2 medium eggs
- 1 ripe banana
- pinch of ground nutmeg
- 1.5tsp baking powder
Method
- Cream the butter and sugar in a stand mixer
- Add one egg and mix until combined
- Add the second egg and mix until combined
- Add the banana, chopped, the nutmeg and baking powder. Then add the flour
- Mix until combined into a batter
- Fold in the blueberries
- Spoon into muffin casings in a muffin tin and bake for 20 minutes at 180 degrees fan assisted
