Blueberry and Banana mini-muffins
With my niece and nephew visiting, this was a good reason to use up some left-over blueberries and a rather ripe banana that was sat in the fruit bowl. These mini-muffins don't grow massively, there's far too many blueberries in them for that and they're very sticky when freshly cooked

Ingredients

  • 110g self-raising flour
  • 110g salted butter
  • 70g golden caster sugar
  • 150g blueberries
  • 2 medium eggs
  • 1 ripe banana
  • pinch of ground nutmeg
  • 1.5tsp baking powder

Method

  1. Cream the butter and sugar in a stand mixer
  2. Add one egg and mix until combined
  3. Add the second egg and mix until combined
  4. Add the banana, chopped, the nutmeg and baking powder. Then add the flour
  5. Mix until combined into a batter
  6. Fold in the blueberries
  7. Spoon into muffin casings in a muffin tin and bake for 20 minutes at 180 degrees fan assisted
