Rocky Road Cookies
These cookies are a treat that's well worth making. If you don't want all 12 (though you probably will!) pop the pieces of cookie dough you've got after step six into a bag and drop them in the freezer. You can cook them from frozen, just add a few minutes to the cook time

Ingredients
- 125g butter, un-salted
- 100g dark brown/muscavado sugar
- 125g golden caster sugar
- 200g chocolate chips
- 50g small marshmallows
- 1 medium egg
- 1 tsp vanilla extract
- 1/2tsp salt
- 225g self raising flour
Method
- Pre-heat the oven to 180 (fan).
- Cream the butter and sugar together
- Lightly beat the egg and add with the vanilla to the creamed butter and sugar
- Sift the flour in, add the marsmallows, chocolate chips and salt
- Mix together to form a dough
- Roll the dough out into a cylinder about 5 cm thick, then divide into quarters and then cut each quarter into thirds to end up with 12 pieces
- Cook the cookies for 10 minutes on a baking paper covered tray (no greasing needed) putting around 6 cookies to a tray roughtly the size of an A4 piece of paper (they will spread as they cook)
- When cooked, leave to firm up for a minute on the baking tray before transferring to a wire tray to cool
The marhsmallows will have melted/disappeared into the cookie leaving a chewy/sticky patch here and there - that's absolutely expected!
