Fruit Scones
There are probably more different recipes for scones, and even just for fruit scones, than there are people who make them on a regular basis. This is another one!

Serves: c. 8 4cm scones
Prep Time: 10 minutes
Cook Time: 15-20 minutes
Ingredients
- 250g self raising flour
- 50g dried mixed fruit
- 50g caster sugar
- 50g cold un-salted butter, cubed
- 1/2 tsp salt
- 180ml milk
Method
- Pre-heat the oven to 200 degrees (fan assisted)
- Mix the flour, sugar, salt and butter together in a bowl and use your hands to rub the butter into the dry ingredients
- Add the fruit and milk and mix together
- Very lightly and briefly knead on a well floured surface
- Squash the dough until its around 2cm thick and cut out scones. Fold the dough together and repeat until it's all used up
- Brush the scones with milk, bake for 15 to 20 minutes then put on a rack to cool slightly before serving
