Noodle salad
Whilst it's certainly not the most attractive of dishes, it's a quick and easy side to make for a BBQ to go with more traditional ones like potato salad and a dressed green salad

Serves: 20 people as one component of a BBQ buffet

Cook Time: 3 minutes
Ingredients
- 3 nests of dried medium egg noodles (approx 200g uncooked)
- 1 red chilli (mild/medium heat)
- 60ml dark soy sauce
- A few drops of fish sauce
- The juice of half a lime
- A splash of oil (olive or toasted sesame for flavour)
- 1 clove of garlic, finely minced
- 1 carrot
Method
- Cook the noodles according to their instructions and set aside
- De-seed and finely chop the red chilli
- Mix the soy, fish sauce, lime juice, oil, chilli and garlic together in the bowl the salad will be served in
- Peel the carrot and then use the peeler to make it into ribbons, straight into the bowl
- Add the noodles and toss until coated then season with freshly ground black pepper
- Taste and add more Soy if required
