Feta & Mint Cous Cous

Feta and Mint Cous Cous with chilli and cucumber
Sometimes it's nice to have something other than a green salad when you've got a "picky" meal of this and that to sit outside and enjoy in the sunshine. This couscous salad is just that and a little goes a long way. It's particularly good at "bulking out" the meal so you need less of the really lardy bits of the meal.

Ingredients

  • 300g dried couscous
  • 200g feta
  • 1 red chilli
  • 10cm cucumber
  • 3 tbsp mint sauce
  • Salt and freshly ground black pepper, to season

Method

  1. Prepare the couscous according to the packet instructions, for mine that was to add 1.2x the volume in boiling water, stir and cover for five minutes
  2. Whilst the couscous is still warm, stir through the mint sauce so that that flavour infuses into the warm cous cous
  3. De-seed and finely chop the red chilli, add to the couscous
  4. Cut the sides off the cucumber, discarding the centre, and then cube into half centimetre (or smaller) cubes, add to the couscous
  5. Cube the feta, into roughly one centimetre cubes, and add to the couscous
  6. Taste the couscous and then season appropriately. If you can leave it on the side for ten minutes or so for the flavours to meld slightly, all the better
